| Directions |
- In a blender or food processor, blend the peanuts, cilantro, oil, garlic, soy sauce, brown sugar, pepperoncini and lime juice.
- Blend into a smooth paste.
- Add salt and pepper to taste.
- Reserve 1/2 cup for serving with chicken.
- Use the rest to brush on the chicken.
- Place chicken pieces in a 9x13 dish.
- Coat pieces with sauce.
- Marinate in the refrigerator for an hour or two.
- Bring to room temperature before cooking.
- Preheat grill to medium.
- Place chicken pieces directly on the grill.
- Turn frequently until golden and crisp.
- Watch carefully so that the sauce does not burn on the chicken.
- Grill for approximately 20-30 minutes.
- Serve with lime wedges and reserved marinade.
