Grilled Sweet Potato Salad with Balsamic Vinegarette Recipe
Directions
  • Spray all sides of sliced potatoes with non-stick cooking spray.
  • Grill potatoes over medium heat (350°F - 400°F) 5 to 10 minutes, depending on thickness of potato slices. Turn occasionally.
  • Cool slightly and cut into 1" cubes.
  • Combine potatoes, pepper, green onions and parsley in a large bowl; toss with vinegarette.
