Directions
In a large mixing bowl, combine flour, sugar, soda, cinnamon and salt. Stir in carrots, raisins, coconut and nuts. In a separate bowl, combine eggs, oil, apple and vanilla. Add to flour mixture and stir only until combined. Spoon into greased muffin tins to about 2/3 full. Bake at 350° for 15 to 18 minutes.

-1 apple, cored and shredded
-2 cups carrots, grated

-3 Eggs
