Portobello Panini Sandwich Recipe
Directions
  • Sauté the mushrooms in a little olive oil in a skillet on medium high heat just until lightly browned on top. (3-5 minutes)
  • Butter the outside of 2 slices of bread.
  • On the inside, spread hummus.
  • Add one portabella mushroom, 4 strips roasted red peppers, two slices muenster cheese and spread basil mayonaisse on the other inside slice of bread.
  • Place on a heated grill with press onto the top.
  • Grill the sandwich until nicely browned on one side then flip and press the other side.
  • Serve warm with your favorite soup.

-2 slices rye bread - or favorite bread
-4 strips roasted red pepper
-1 tablespoon hummus
-2 slices muenster cheese
-1 tablespoon basil mayo
- BASIL MAYO
-1/4 cup mayonnaise
-4 basil leaves - chopped
-1 teaspoon lemon peel - grated
