| Directions |
- Sauté the mushrooms in a little olive oil in a skillet on medium high heat just until lightly browned on top. (3-5 minutes)
- Butter the outside of 2 slices of bread.
- On the inside, spread hummus.
- Add one portabella mushroom, 4 strips roasted red peppers, two slices muenster cheese and spread basil mayonaisse on the other inside slice of bread.
- Place on a heated grill with press onto the top.
- Grill the sandwich until nicely browned on one side then flip and press the other side.
- Serve warm with your favorite soup.
