| Directions |
- Place mashed potatoes, yeast and flour in a large bowl.
- Pour in water and mix well.
- Leave to rise in a warm place for approximately 30 mintues. The dough will double in size.
- Heat a non-stick fry pan and add 1 tablespoon of oil to it.
- Drop spoonfuls of the dough onto the preheated pan. They should be approximately 2-3 inches in diameter.
- Cook potato pancakes over medium heat for 3-5 minutes or until light golden brown on the underside.
- Turn with a spatural and cook on the second side for approximately 1 minutes.
- Season with salt and pepper and transfer to a platter.
- Top with a small dollop of sour cream and 1/2 slace of ham that is rolled up.
- Garnish with a grind of pepper and sprinkle of green onion.
