| Directions |
- Peel potatoes and chop onion. In enough salted water ( 1 teaspoon salt per quart of water) to cover, boil potatoes until very soft.
- Wash kale, remove center stems and cook in boiling water about 5 minutes (use water from the potatoes if you wish). Drain and chop.
- Heat butter in skillet and saute onions until soft. Add chopped kale to onions and stir to mix well.
- Heat milk. Mash potatoes, adding warm milk as needed to desired consistency. Stir in onions and kale. Taste for seasoning; add salt if needed. Serve warm.
