| Directions | Heat oven to 400°. Grease bottoms of 12 medium muffin cups (2 3/4" in diameter) Beat eggs, stir in milk & oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full. Bake 20-25 minutes or until golden brown. Immediately remove from pan. 12-muffins. Apple: Stir in 1 cup grated apple w/the oil and add 1/2 tsp cinnamon with the flour. Sprinkle with nut-crunch topping. Mix 1/3 cups brown sugar (packed), 1/3 cup broken nuts + 1/2 tsp. cinnamon. Bake 25-30 minutes. Blueberry: 1 cup fresh blueberries or 3/4 cup well-drained frozen ones (thawed) into batter. |
