Preheat oven to 325. Grease 3 medium loaf pans. In a large bowl, beat eggs until fluffy. Add oil and pumpkin, beating until smooth. In a medium bowl, combine remaining ingredients. Gradually beat into pumpkin mixture. Pour batter into prepared loaf pans. Bake for 50-55 minutes or until a knife inserted near the center comes out clean. Cool 10 minutes before removing from pans. Move to wire rack to complete cooling. Delicious warm and freezes well. |
