| Directions | - Preheat oven to 350°F.
- Prepare muffin tin with liners or lightly grease each muffin cup.
- In a large mixing bowl combine the first eight dry ingredients.
- In a separate bowl slightly beat eggs. Add oil, pumpkin and vanilla. Stir to combine.
- Add egg mixture to dry ingredients, stir until just combined.
- Fold in nuts.
- Spoon into muffin tin.
- Bake 20 minutes or until a toothpick comes out clean.
- Remove from oven. Leave muffins in pan 5 minutes before transferring to a cooling rack.
