| Directions |
- In a small blender container (see TIP), beat cottage cheese, sugar, vanilla and almond extract, if using, until creamy. If mixture is too dry to blend well, add a spoonful or two of milk or cream.
- To assemble, put a tablespoon of raspberries in each of 2 decorative glasses, small wine glasses, or small glass bowls. Add a layer of the cheese mixture, the rest of the raspberries (with a few reserved for the top), and the rest of the cheese. Top with a raspberry or two, and a sprig of mint if desired.
- TIP: On many blenders, a small glass Mason jar can be used in place of the regular blender jar, making it easier to blend small quantities.
