| Directions |
- Trim and snap fresh green beans. Cook in salted, boiling water until "al dente" (or just slightly crisp).
- Whisk together oil, vinegar, orange juice, and fennel. Season with salt and pepper. Set aside.
- When beans are finished, drain and allow to cool slightly. Toss beans with the feta cheese. Mix the beans and cheese with the baby greans.
- Pour dressing mixture over the greens. Top with dried cranberries and/or almonds, if desired.
- Refrigerate until ready to serve.
