| Directions | Beat eggs until light and fluffy. Add sugar and beat well. Stir in oil, vanilla and zucchini. Sift dry ingredients together and add to mixture; stir in nuts. Pour into two greased and floured 8 x 4 bread pans. Cook 1 hour, or until it passes the toothpick test, at 325° You can substitute the zucchini for pumpkin or any other squash. |
