| Directions |
- Cook pasta according to package directions in boiling salted water. Leaving pasta water on medium-high heat, scoop cooked pasta out with a slotted spoon or skimmer, and drain well.
- Add beans to boiling pasta water and cook until crunchy-tender. Lift out and drain.
- Add onions to boiling pasta water and cook for a minute or two, to mellow the harsh raw-onion taste. Drain well.
- Combine pasta, peppers, beans, onions, and cheese (optional)in a large bowl.
- Pour vinaigrette over all ingredients and mix well. Sprinkle with salt to taste.
- Serve at room temperature, or chilled.
