| Directions |
- Cook potatoes in salted water until just tender. You don't want to over cook them. Drain and allow to cool. Cut potatoes into cubes.
- In a small bowl, whisk the oil, lemon juice, and lemon peel.
- Add the green pepper, onion, cilantro, and basil. Whisk together and pour dressing over potatoes.
- Add salt and pepper to taste.
- Let stand in refrigerator for at least an hour to allow potatoes to absorb the flavors.
