| Directions | Cut chicken into 24 one-inch cubes. Wrap each with 1 piece of bacon and secure with a wooden pick. Combine preserves, soy sauce, sesame oil, ginger and garlic in a shallow dish and add chicken. Cover and marinate in the refrigerator for 2 hours, turning occasionally. Coat a broiler rack with cooking spray and arrange chicken on the rack. Place in a broiler pan and bake 10 minutes in a 450° oven. Turn the chicken and bake 10 minutes longer. Serve warm with the sauce. For the sauce, combine preserves, vinegar and soy sauce in a bowl and mix well. Makes about 2 dozen chicken bites. |
