| Directions |
- Preheat oven to 400° F. Have the meat at room temperature before roasting.
- Trim any silverskin or areas of excess fat from meat. Cut rack in half if necessary to fit in roasting pan, or leave whole. It will roast well either way. Salt and pepper the rack, put it in preheated oven, and roast to desired doneness, about 13 minutes per pound for medium-rare, or 135° F on an instant-read thermometer.
- Remove from oven and let stand about 5 minutes before serving.
