| Directions | - Preheat oven to 450ยบ F.
- Coat a large skillet with vegetable cooking spray. Place duck breasts into prepared skillet and brown lightly, approximately 1 to 3 minutes on each side.
- Coat a baking dish with vegetable cooking spray, put the duck in baking dish, and bake for 20 minutes, or until done.
- Allow duck to cool before slicing thinly. Divide spring greens between 2 serving plates. Sprinkle greens with vegetables, the sliced duck, and croutons. Drizzle with dressing. Season to taste.
- Serve immediately.
