| Directions | In a food processor or powerful blender, combine all the ingredients except for the salt, pepper and parsley. Process until it is smooth. If necessary, thin down with a few drops of olive oil. Season the hummus with salt and pepper, to your liking. Sprinkle with chopped parsley right before serving, if desired. NOTE: The flavors blend if it is made 1-2 hours in advance, cover and refrigerate. It will keep for up to 4-5 days. |
