| Directions |
- Remove stems and tails from gooseberries.
- Salt and pepper the chops and pan-broil. (To pan broil: heat a heavy skillet, lightly filmed with oil, until hot. Cook chops to desired doneness, about 3 - 4 minutes per side, depending on thickness. Don't overcook or they will be dry and tasteless.)
- Remove chops to a warm plate and cover loosely, leaving browned bits and about 1 tablespoon fat in pan. If there's less than 1 tablespoon fat, add a little butter or oil.
- Add gooseberries to pan and cook about 2 minutes to soften. Add sugar, soy sauce and about 1/2 cup water. Mash most of the gooseberries into the sauce and cook to desired thickness--about 5 minutes total cooking time.
- Add salt and pepper to taste, and additional sugar if needed--but sauce should be tart, not sweet. Spoon over chops and serve.
