- Preheat oven to 350ยบ F.
- Grease and flour bread pans.
- In a large bowl, beat eggs until fluffy. Gradually add sugar until blended. Add oil, apple sauce, vanilla, zucchini, nuts and zest. Beat mixture until well combined. Stir in remaining ingredients.
- Pour batter into prepared pans. Bake about 50-60 minutes or until done.
- Remove from pans and cool.
