Add 1/2 inch of water to large sauce pan, then add apples.
Cook over medium heat until apples become soft. Add cinnamon and vanilla. Cook until consistency is as desired, either chunky or smooth textured.
Remove from heat, add sugar and stir until dissolved. Depending on the sweet or tartness of the apples, adjust the amount of sugar to taste.
Serve warm or chilled.
The texture of the sauce will often depend on the variety of apple, some cook up softer than others, providing a smoother textured sauce. For smoother apple sauce if it is too chunky, place sauce in blender or a food processor and blend until desired consistency.
