| Directions |
- Heat oil to 375° F. in an electric skillet.
- While oil is heating, cut tortillas into in half with a scissors; then cut each half into 1-inch wide strips.
- Mix the cinnamon and sugar together; set aside.
- When oil is preheated heated, begin frying the tortillas. Place enough tortilla strips to be frying just a single layer; don't overcrowd them.
- Fry until lightly browned on one side and then flip them over to lightly brown the other side. Watch carefully because they cook fairly quickly.
- When they are browned on both sides, remove and drain on paper towels.
- Sprinkle with cinnamon and sugar mixture as soon as removed from the oil; then start frying the next batch.
- Continue until all the tortilla strips are fried and coated with cinnamon and sugar.
Note: The finished chips cool fairly quickly and then can be stacked in a bowl or container to make room for more chips as they get done. |
