 | Directions | Preheat oven to 375 degrees F. Season chicken with salt and pepper if desired. Set aside. Place potato slices on a piece of aluminum foil. Top with chicken, bell pepper, onion and thyme; fold foil over and seal edges securely to form a pouch. Place pouch on a baking sheet. Bake for 20-25 minutes or until the chicken is cooked through and no longer pink in the middle. NOTE: This can also be done on the grill over medium high heat. |
