Rhubarb Layer Cake - Recipe

A quick and easy rhubarb dessert with the combined flavors of rhubarb and strawberries. This is sure to become a new family favorite spring dessert.

Rhubarb Layer Cake Recipe
Directions
  • Preheat the oven to 350° F. Grease the bottom of a 9 x 13 baking pan.
  • Cut rhubarb into 3/8 to 1/2 inch pieces and place in the bottom of the prepared 9 x 13 pan.
  • Sprinkle the sugar evenly over the rhubarb. Sprinkle gelatin over the layer of sugar and the dry cake mix over the sugar evenly.
  • Drizzle the melted butter over the cake mix.
  • Drizzle water evenly over the top of all the ingredients. Try to at least dampen all the dry mix.
  • Place in the preheated oven and bake for 45 to 50 minutes or until bubbly and lightly browned on top.
  • Allow to cool at least slightly before serving. It can be served warm or cool with a little whipped topping, if desired.

-1/3 cup butter or margarine
-1 cup hot water
