Buffalo Chicken Chili Recipe
Directions
  • Cut chicken breast into chunks, approximately 1-inch.
  • Prepare other ingredients as indicated.
  • Combine all the ingredients in the slow cooker, excluding the buffalo wing sauce and the blue cheese.
  • Place the cover on the slow cooker and cook on high for 1 hour. Turn down to low and cook for 6 to 7 hours. Or cook on low for 8 to 9 hours.
  • About 20 to 30 minutes before serving, add the buffalo wing sauce. Cover again and allow the chili to finish cooking.
  • Can be served with crumbled blue cheese. This is optional.

Ingredients
-4 to 5 lbs. of boneless skinless chicken breast
-2 cups diced celery
-2 cups dice carrots
-1 1/2 cups chopped onions
-2 cans diced tomatoes - large can (28 oz.), do not drain
-2 cans black beans - 15 oz., drain and rinse
-2 cups chicken broth
-1 1/2 tablespoons chili powder
-1 teaspoon salt
-1/2 cup buffalo wing sauce (add more if desired)
- blue cheese - crumbled
