| Directions |
- In a small bowl, combine oil, vinegar, onion, basil, salt, and pepper. Add mushrooms, stir, and cover; marinate for about 2 hrs. at room temperature or overnight in the fridge. Stir occasionally to keep mushrooms coated with marinate. Place spinach in a bowl; add mushrooms mixture. Mix and toss well. Serve immediately.
