Rinse the Quinoa with a fine strain (FYI - Ancient Harvest brand is pre-rinsed). Combine the Quinoa, broth, onions, and celery into a pot and stir. Bring contents to a boil and stir again. Reduce heat to simmer and cook until all moisture is absorbed (approximately 10-15 minutes). Fluff with a fork and serve as a replacement for rice or potatoes.
Note: Quinoa is very versatile and absorbs flavors well. Consider replacing the broth with 1/2 water and 1/2 apple juice to serve with pork. Or add 1 tsp. of cinnamon and 1/2 cup of diced dried apricots to give it a Mediterranean flavor.
