| Directions | Pre-rinse quinoa 3 times. Sauté apples in 1/2 T. oil in pan, then set aside. Take apples out of pan and add 1 T. oil, onions and celery and sauté for 2 - 3 minutes. Mix in quinoa and stir fry until it begins to brown. Add broth, cinnamon, thyme, and salt and bring to a boil. Cover and simmer until liquid is absorbed. Remove from heat and add the sautéed apples and nuts. Serve warm. |
