Wash and dry potatoes. Cut into quarters. Grease 8" square or round casserole dish with 1 tablespoon of the butter. Place potatoes in dish. Sprinkle with salt and pepper. Stir. Dot with remaining butter. Add water to depth of 1/8" around potatoes. Bake, uncovered, at 375° for 1 hour, or until potatoes are crisp and brown on outside and tender inside. Variation: Instead of adding water, grate 1/2 stick of butter over potatoes, sprinkle with 1/2 teaspoon seasoning salt and 1/4 cup Parmesan cheese. Cover with tin foil. Bake 60-90 minutes at 350°. Can also be baked at same time as your meat, at a lower heat, for up to 2 hours. Just make sure it's covered. |
