Creamy Stuffed Baked Potatoes - Recipe

Twice baked potatoes stuffed with bacon, onions, cheese, and sour cream. Goes great with grilled steak, pork chops, or chicken.

Creamy Stuffed Baked Potatoes Recipe
Directions
  • Scoop out pulp of potatoes, leaving skins intact. Mash pulp.
  • Sauté onion in 3 tablespoons of bacon grease.
  • Combine pulp, crumbled bacon, onion, cheese, sour cream, salt and pepper.
  • Stuff skins with this mixture. Sprinkle with paprika.
  • Bake at 350 degrees for 15 to 20 minutes.

-4 baked potatoes (large)
-8 slices bacon, cooked until crisp (save 3 tbsp. grease)
-1/2 cup green onions, thinly sliced
-1/4 cup Parmesan cheese, grated
-1 cup sour cream
- Salt and black pepper to taste
-1/2 teaspoon paprika
