 | Directions | In a medium saucepan over medium heat, place chopped cauliflower. Cover cauliflower with water and add salt, cover and cook for 10-15 minutes, until fork tender. Thoroughly drain cauliflower and return to pot. Add sour cream, cheddar, butter and pepper and mash with hand mixer to consistency of lumpy mashed potatoes. Serve immediately. |
