| Directions | Cook rice a day ahead and marinate in Italian dressing. Add mayonnaise to rice mixture and stir well. Fold all the vegetables into rice mixture. Press into 5 1/2 C. mold, cover, and let set for at least 3 hours. To serve, unmold onto lettuce and if it's a ring mold, put tomatoes in the middle. Serves 8 - 10 people. |
