| Directions | Cook rice according to package directions. Cool slightly. Mix rice, beans, garlic, onion and chilies in a large bowl. Preheat oven to 350°. Butter large casserole. Cover bottom with layer of rice and bean mixture. Cover with layer of jack and cottage cheese. Layer again until ingredients are used up, ending with layer of rice mixture. Reserve 1/2 C. shredded cheese. Bake 30 minutes. Add reserved cheese and bake 5 more minutes or until cheese is melted. NOTE: If you want to save time, just mix all ingredients together and bake in large casserole dish, reserving the 1/2 C. of cheese until 5 minutes before done. |
