| Directions | Sauté onion and bell pepper in butter. Heat soup (no water). Drain hominy and place in buttered casserole. Mix onions and peppers with soup and one can (or less) mild Rotel tomatoes. Pour over hominy. Bake approximately 45 minutes at 350°. Cover with grated cheese and bake 15 minutes more. |
