Preheat oven to 425 degrees F. Bake sweet potatoes until soft, about 1 hour. Remove from oven and allow to cool so you can handle potatoes. Cut in half, lengthwise, and scoop insides into a large mixing bowl. Add all remaining ingredients and blend well. Using a whisk, mix until potatoes are evenly smooth, 1 to 2 minutes. Add salt to taste and serve. Yield: 8 servings. |
