| Directions | Cut onion rings and place in ice water that has been sweetened with a heaping tablespoon of sugar. Put onion rings to soak in the refrigerator for at least two hours before frying. (The secret lies in the pre-soak.) Drain onion rings and dip in batter. Fry in deep, hot oil. A large onion will serve 4 to 6 people. NOTE: Do not prepare batter until frying time. Batter is also good used with eggplants and squash. |
