| Directions | Cook eggplant until tender in as little water as possible. Drain thoroughly. [The better you drain, the fewer cracker crumbs you will need.] Add salt, pepper, onion powder, garlic powder, and cheese. Add egg and enough crumbs to shape into "flattened" croquettes. Roll in additional crumbs. Chill 1 hour. Fry in deep fat and serve hot. |
