| Directions | Heat oven to 350°F. Peel and chop eggplant fine or grind in food processor. Sauté eggplant, onions, parsley, tomatoes, celery, green pepper and scallions. Transfer to mixing bowl and let cool. Add egg, 1/3 C. oatmeal, oregano, oat bran,minced garlic or garlic powder, and salt. Place in greased baking pan. Sprinkle with remaining oatmeal. Bake for 25 minutes. |
