Place cauliflower pieces in the blender, then add soy milk, margarine, salt, and pepper. Whip until smooth. Pour cauliflower into a small baking dish. If desired, sprinkle with paprika and seasonings. Bake in a hot oven until bubbly or heat quickly in the microwave.
VARIATION: For children who eat only white foods, white rice can be added as well as potato.
