Garlicky Roasted Vegetables - Recipe

Roasted vegetables bring out a whole new flavor, not to mention keeping all their nutrion. Try it with any vegetables in season. You can do all the preparation before hand and throw them on the baking sheet whenever you are ready.

Garlicky Roasted Vegetables Recipe
Directions
Cut up fresh vegetables into bite sized pieces.

Combine vegetables and marinade in a zipper bag. Seal and marinate several hours in refrigerator.

Preheat oven to 425 degrees F and spray baking sheet with cooking spray.

Lay marinated vegetables on sheet and bake 30-40 minutes or until vegetables are soft and slightly browned.

-1 onion
-1 green pepper
-1 cup zucchini
-1 cup summer squash
- MARINADE:
-1/4 cup olive oil
-1/4 cup balsamic vinegar
-2 cloves garlic, crushed
- salt and pepper, to taste
