| Directions | In an oblong covered glass microwave dish, mix squash, peppers, onion, mayonnaise and egg. Add one cup of the cheese and salt & pepper to taste. Mix again. Smooth out evenly. Top with remaining cheese. Microwave directions: cook 15-18 minutes (or until cheese just starts to turn brown on edges) on high. Serve while hot. Yield: 6 to 10 servings. |
