| Directions | On stove top sauté onions in butter until soft. Add carrots and cook on medium heat for about 3 minutes. Add broccoli, bell pepper, garlic and rice. Add chicken broth and bring to a broil. Cover and cook on low to medium heat for about 20 minutes or until rice is done. Add parsley, salt and pepper. With a fork toss in the cheese. Place in casserole dish and broil at 350° for about 10 minutes or until top is slightly brown. |
