Directions
Toast walnut pieces and coconut in a low 300° oven. The walnuts will take about 10 minutes and the coconut takes about 5 minutes. Chill.

Combine grated carrots, apple, lemon zest, orange and lemon juices, currants/raisins, salt and ginger. Add walnuts and coconut.

Serve. Makes 3 cups.

-1/4 cup walnut pieces
-1 tablespoon shredded coconut
-2 cups grated carrot
-1 apple, cored and grated
- zest and juice of 1/2 lemon
-1/2 cup orange juice
-1/2 cup currants or raisins
-1 1/2 teaspoons grated fresh ginger
- dash of salt
