Directions
Cut asparagus into 2 inch pieces and slice mushrooms. Break salmon into 2 inch pieces. Mix dressing ingredients - add onion and let stand 10 minutes.

Toss lettuce with onion dressing. Put lettuce mixture on platter, put asparagus, salmon and mushrooms over lettuce and serve immediately.

-1 pound small salmon fillets - cooked - grilled or baked
-1 red onion thinly sliced (medium)
-1 pound asparagus - ends trimmed - grilled or boiled
-1/4 pound shiitake mushrooms - grilled or fried
-8 cups torn romaine and red leaf lettuce
- Dressing
-1/4 cup cider vinegar
- grated peel and juice of 1 lemon
-2 teaspoons mustard - dijon
-1 clove garlic - minced
-1/4 teaspoon salt
-1/4 teaspoon pepper
