| Directions |
- Peel cucumber; quarter lengthwise and remove seeds. Dice thinly and place in shallow bowl with coarse salt. Weigh down with plate. Refrigerate for an hour or more. Ring out liquid.
- Mix cucumber and garlic in yogurt. Add lemon juice and mint. Salt to taste. Serve with pita bread.
NOTE: If you can't find Greek yogurt, drain regular plain yogurt through a coffee filter over a bowl overnight. |
