Add sliced parsnip and carrots to 4 cups water in a medium saucepan and bring to a boil. Add 1 soup mix packet and celery; reduce heat to a simmer, uncovered, stirring occasionally for approximately 5-10 minutes. NOTE: Can also add some cauliflower pieces, zucchini slices, frozen peas, and left over cut up chicken during the simmer phase for a heartier soup. Makes 4 cups (can use 8 cups of water and 2 packets of the soup mix). |
