| Directions | In large pan, combine first 7 ingredients and simmer for 20 minutes or until vegetables are tender. In another saucepan, melt butter, stir in flour. Cook and stir over medium heat for 2 minutes, Whisk in milk, salt and pepper. Bring to a boil and stir constantly for 2 minutes. (I do this step from melting butter on, in the microwave so it doesn't scorch.) Add to vegetable mixture with the ham and simmer 10 minutes. Stir in cheese and heat to melt. The vegetables can be cooked in the microwave also. This makes 3 quarts and will serve 12 people. |
