| Directions | Cook wild rice according to package directions. In a large bowl, toss together cooked wild rice, mandarin oranges, chopped green onions, dried cranberries, toasted pecans and chopped mint. In a small bowl, combine orange juice, oil, salt and pepper. Pour orange juice mixture over wild rice mixture. Toss until evenly coated. Makes about 6 servings. *To toast, place pecans in a single layer on a baking sheet. Bake at 350° for approximately 10 minutes or until nuts are golden brown. |
