| Directions | Wash and drain beans. Soak overnight in salt and enough water to cover. Drain and rinse beans. Add 2 quarts water, ham, bay leaves and thyme. Simmer covered for 3 hours. Remove from heat and add celery, bell pepper, onion and tomatoes. Salt and pepper to taste. Return to stove and simmer 1 1/2-2 hours. Add parsley and serve. |

- |  | 1 quart whole tomatoes with juice |
- |  | salt and pepper, to taste |
- |  | 2 tablespoons parsley |
