| Directions | In large pot, place cubed potatoes with enough water to cover well. Bring to a boil and boil rapidly (lightly covered - may have to reduce heat) about 20 minutes or until potatoes are tender throughout to a fork prick. Drain potatoes and return to pan with heat off. Add butter, milk, salt, pepper. Mash to desired consistency. If potatoes seem too thick - add cheese and melt all cheese stirring stiff mix. If still too thick - add milk a tiny bit at a time until desired consistency. Add more salt & pepper to taste if need be. Cheese may be omitted if desired for plain mashed potatoes. |
